Baingan ka Bharta is one of the South Asian dishe, ingredients added along with eggplant varies based on location. Taste’s great when served with breads ( chapatti, roti, etc..), Rice.


  • 1 medium sized egg plant
  • 2 chopped onions
  • 2 chopped tomatoes
  • 1 tsp chopped garlic
  • 1 inch chopped ginger
  • 3 tbsp oil
  • 1 jalapeno pepper chopped(optional)
  • 1 tsp amchur
  • 1 tsp chilli powder
  • 1 tsp corriander powder
  • 1 tsp garam masala
  • salt to taste


  • Roast the eggplant(Baingan) on gas stove directly.When the skin is all wrinkled turn off the gas
  • Peel the skin and mash eggplant. Keep it aside
  • Heat a oil in pan add onion, garlic and ginger sauté till onions are translucent
  • Now add tomatoes and jalapeno pepper
  • When tomatoes become soft add amchur ,chilli powder,coriander powder ,salt,garam masala and mashed eggplantgan)
  • Mix well and turn off. Serve baingan ka bharta with hot rotis or chapathis.
