  • 6 small size brinjal
  • water
  • chopped onion
  • garlic ginger paste
  • red chiily power
  • turmric powder
  • 2 tbsp oil
  • salt to taste
  • chopped tomatoes
  • coriander powder
  • cumin powder
  • garam masala
  • coriander leaves
  • sesame seeds
  • coconut
  • peanuts to need
  • 1 tsp mustard
  • 1 tsp methi
  • 5 to 6 curry leaves
  • coriander leaves chooped


  • Take 6 small size brinjal and cut in X shap and see clean and put in water.
  • Take a pan in 1 tbsp oil for onion tamoto paste preparation, add the chopped onion,ginger garlic paste, garam masala,add turmaric, chilli, salt, cumin, chopped tomatoes and mix well.
  • it mixture take in bowl and bleand it.
  • for stuffing preparation. take bowl on medium flame.
  • add sesame seeds on low flame dry roast.after 3 or 4 min. seeds seen in brown colour. add the coconut saute on low flame.
  • Add the roasted peanuts.add chilli powder and salt. saute it for 1 min.
  • Blend it and ready coarse powder.
  • take the brinjal and stuff well.
  • take a pan and add 3 or tbsp oil.
  • put this stuffing brinjal for fry and cover with cap of the pan for 3 to 4 minute.
  • Flip around the brinjal again 3 to 4 minute and brinjal are half cooked.
  • Keep aside in one plate this brinjal.
  • take 2 tbsp oil in pan. add the mustard.add methi and curry leaves, add the chopped onion.saute well.
  • add the tomato onion paste and saute well.while oil seperate.
  • Add the fried brinjal on this greavy.add the tamarind water.mix well.cooked 5 minutes on medium flame.
  • And cook completely.take in plate.serve with capati or rice.and garnish with coriender leaves.
  • finely ready very tasty baingan masala to serve it.
