Ingredients:

  • 1 cup rice , ⅓ cup moong dal ,
  • 1 tablespoon ghee,
  • ½ teaspoon cumin seeds ,
  • 1 small to medium tej patta ,
  • ½ inch cinnamon ,
  • 1cloves ,
  • 1green cardamoms ,
  • 1 medium onion chopped,
  • 1 teaspoon ginger garlic paste ,
  • 1 small to medium tomato  chopped,
  • 1 or 2 green chilies  - chopped,
  • 1 to 1.25 cups mixed chopped veggies ( carrot,beans,green peas or any a vegetable of your choice),
  • ¼teaspoon turmeric powder ,
  • ¼ teaspoon red chili powder ,
  • salt to taste,
  • 1 pinch asafoetida,
  • 3 TBS pure ghee,
  •  2 cups water ,
  • chopped coriander leaves for garnish 

Instructions:

  • Take rice and moong dal in a bowl. rinse with water for a couple of times. drain and keep aside. also chop the veggies and keep aside.heat 1 tbsp ghee in a pressure cooker add 1/2 tsp cumin seeds, tej patta, cinnamon, cloves, green cardamoms. saute till the spices crackle and become fragrant.Add onions,ginger garlic paste. stir and saute till the raw aroma of ginger-garlic goes away.
  • Add all veggies chilly powder, Turmeric powder,salt rice and moongdal and water(u can use more water according to the consistency of khichdi u want).pressure cook for 3 to 4 whistles. 
  • vegetable khichdi is ready serve hot with ghee
